Los auténticos filetes rusos, conocidos popularmente como “katleta” (a pesar de que esto denomina a la costilla del cerdo), son una variante de las populares hamburguesas, realizadas con carne picada (de cerdo, ternera o pollo), con huevo, pan blanco, leche y cebolla finamente picada. También puede añadirse ajo, patata, queso y especias.
Receta típica:
- 500 gr. de carne picada (ternera típicamente, también cerdo o pollo)
- 50-100 gr. de pan blanco
- 100-150 ml. de leche
- 1-2 cucharaditas de harina
- 1 cebolla
- 1 huevo
- Sal
- Pimienta
Se remoja el pan en leche. Se pica aparte la cebolla muy fina y se añade la carne picada, el huevo, la harina, la sal, la pimienta y el pan mojado en leche. Se mezclan bien todos los ingredientes. La masa se deja con forma redonda ligeramente aplastada, se reboza en harina y se pone a freír en una sartén. Típicamente se fríen a fuego fuerte y luego se tapan para ponerlas a fuego lento. Un filete ruso bien hecho queda jugoso y es muy sabroso.

True Russian style burgers, known popularly as “katleta” (even though this means pork chop), are a variant of the popular burgers, made by minced meat (pork, veal or chicken), egg, White bread, milk and onion thinly chopped. Onion, potato, cheese and spices can be added too.
Typical recipe:
- 500 gr of minced meat (typically veal, also pork or chicken)
- 50-100 gr of white bread
- 100-150 ml of milk
- 1-2 tea spoons of flour
- 1 onion
- 1 egg
- Salt
- Pepper
Bread is soaked in milk. Onion shall be chopped thin and meat, egg, flour, salt, pepper and the bread soaked are added. All ingredients are mixed thoroughly. The dough is formed in round shape, slightly flattened, coated in flour and fried in a pan. Typically they are fried first with strong heat and then covered and soft heated for some more time. A good Russian style burger is juicy and really tasty.
